You need to remove brackets like this :
7z a -t7z -m0=lzma -mx=9 -mfb=64 -md=32m -ms=on -sfx Kirby.exe Kirby\ Superstar.smc

Just letting know, that 7zCon.sfx is there on Karmic and Lucid and will produce a Linux self extracted binary.
