To fix the fallout: First, ensure you are running the latest kernel and all your other packages are up-to-date; Then in "Software & Updates" > "Additional Drivers" change to the Nouveau driver (which seemed to uninstall all the Nvidia packages); Finally run `sudo -i ubuntu-drivers autoinstall` which should select the correct Nvidia driver.

Attempting to switch to nvidia-driver-450-server via "Software & Updates" > "Additional Drivers" (for me) reported unmet dependencies for llvm10. Despite this, the driver change still appeared to run. It never declared completion, but having waited until nothing further appeared to be happening and rebooted, "Additional Drivers" reports that I am using the 450 driver, and this appears to have addressed the obvious symptoms.
