Hi Dalma,
the log suggests that this is failing for some time already.
I saw at least two consequtive updates failing the same way in the log.

But in your log is also:
nginx: configuration file /etc/nginx/nginx.conf test faile

That suggests a broken config which in turn will let the upgrade fail that restarts the service.
Please fix the configuration so the service restarts correctly - afterwards an upgrade will work.
