During installation of "bookstack" (using the "Ubuntu 22.04"-script at "https://www.bookstackapp.com/docs/admin/installation/") mysql-server was installed but the mysql-server" failed during start.

I see you are using zfs and from your logs I see:
2022-07-03T21:40:21.046795Z 1 [ERROR] [MY-012963] [InnoDB] Log file ./ib_logfile1 is of different size 0 bytes than other log files 18874368 bytes!

This is due to an issue with zfs that will be fixed in the next kernel release. I will mark this bug as a duplicate of that issue for reference.
