Hi,
from your log

mysqld will log errors to /var/log/mysql/error.log
mysqld is running as pid 29776
Error: Unable to shut down server with process id 29776
dpkg: error processing package mysql-server-8.0 (--configure):

I've found a few more like that and will combine the bug reports into one marking this one a duplicate - please participate in any discussion that might arise on the main bug that will be left open.
