Failed to configure server after it was installed. Said I had changed the config file but do not know what changed and when this happened.

Unfortunately it's unclear from the logs why mysql wasn't running.
Could you try the following command and see if the error happens again, and then one more time attach /var/log/mysql/* please?
sudo apt update
sudo apt install --reinstall mysql-server-5.7
