'wayland' is just the protocol library so reassigning to Mutter which implements the protocol.

Does this mean the webcam microphone works in Xorg?

Weird. I think this is PulseAudio's responsibility but how that relates to Wayland is not obvious. One possible explanation is the number of libraries/plugins used internally in the audio system that try to connect to an X11 server (I don't know why but they do). Starting recently mutter/gnome-shell does not have Xwayland running all the time so random library components are failing to find an X11 server. Seen also in bug 1949200.

which webbrowser are you using? do you see some volume on the setting indicator under wayland? could you try if gnome-sound-recorder has the same issue?
