FTR, 6.1.0 is already available as a snap (currently in the candidate channel, will soon be promoted to stable if no outstanding issue comes up).

I didn't manage to get it in the archive before feature freeze, so I have requested an exception, tracked by bug #1789240.

The exception was granted and the packages are currently building in cosmic-proposed.
