I found a solution!

I found it in a different thread on another board. The problem is caused when you are trying to install with a pre-existing /boot partition (perhaps one that has been modified). I was able to get past the problem by simply not specifying a /boot partition and letting the installer make a fresh /boot directory on the / (root) partition. I now have to copy some files and run grub to get my /boot partition working again.
