Thank you for taking the time to report this bug and helping to make Ubuntu better. The relevant dpkg terminal log says:

The failing zz-flash-touch-initrd comes from initramfs-tools-ubuntu-touch. So re-assigning to initramfs-tools-ubuntu-touch.
