The help options summary says:
-t, --toggle-visibility
The help summary appears to be the correct option.

I can confirm the manpage and help options disagree in guake 0.4.3-3 on Ubuntu Raring. I note that guake -h lists the additional command: tab=SELECT_ TAB

-s SELECT_TAB, --select-
Presumably this has been added as a new feature while show-hide was renamed to toggle-visibility. Thus the manpage would need to be updated to reflect the latest version.
