Re-installing the package gtk3-engines-unico seems to fix this issue.

After working a while the processes names disappeared again. Looking a bit more carefully I found a huge icon for pgAdmin this is possibly messing up the Process Name column (attachment below).
Eventually, this might all boil down to an icon scaling method failing.
