The error in your log is:

Installing for x86_64-efi platform.
grub-install: error: cannot open `/boot/efi/EFI/BOOT/BOOTX64.efi': Is a directory.
dpkg: error processing package shim-signed (--configure):
 subprocess installed post-installation script returned error exit status 1

This indicates that your EFI System Partition has been corrupted. You probably need to remove /boot/efi/EFI/BOOT/BOOTX64.efi to let the upgrade complete successfully.

Reassigning this bug to grub; it's possible there's something we can do here to make the upgrade more robust.
