GRUB_HIDDEN_TIMEOUT=0
GRUB_HIDDEN_TIMEOUT_QUIET=true
GRUB_TIMEOUT=0

in /etc/default/grub doesn't have the effect of not displaying the grub menu.

I think this is actually intentional behaviour when os-prober is used.
