Turns out that Enabling Raid and Intel Device Management in the bios then setting up a EFI System Partition. Allowed me to install. Once that was done the installation of the Nvidia Proprietary Driver not nouveau got rid of the original issues I was having where my desktop would lock up with a black screen.

This is where I found the solution.

It appears that Ubuntu/Mint/Redhat ETC will only install following the instructions on the above link.
Before setting up my desktop using the configuration in that link. I have tried RedHat/Ubuntu and Mint and every reboot was risky. I have reloaded 4 times in 6 months. The odd thing was it would reboot and about half the time Linux would start to come up then the screen would go black and the machine would reboot on its own. I may have 2 issues. One, the Disk misconfiguration and Two, using a video driver that was not functioning properly.
