According to this comment: https://gitlab.gnome.org/GNOME/gnome-shell/-/issues/5524#note_1481502 enabling audio recording only requires changing a parameter via dbus. If the change is not invasive I believe it should be done by default in Ubuntu. Note that Kazam is not functional on Wayland, which means that >= Jammy lacks a well integrated audio+video screencast recording tool.
