I have two machines with Jammy on them and this is happening reliably on one but not the other.

On the one where it's happening, it happens even immediately after I've updated all out-of-date packages and rebooted the machine.

I don't know why it's not generating a crash report. :-(

I just installed another round of new Jammy updates on the laptop where gnome-extensions-app was crashing, and it's not crashing anymore. I don't know if it's the installing of the updates that fixed this or if it's an intermittent issue and just not happening at the moment. Hard to tell since no crash report was generated.
