/org/gnome/desktop/peripherals/touchpad/tap-to-click does not seem to have any effect.

I disabled /org/gnome/desktop/peripherals/touchpad/tap-to-click before reporting here. I can confirm that it has no effect.

I've also tried to workaround this with synclient without any success so far :/

Just registered to spread the solution to this annyoing problem. By the way - most annoying registration process I have ever seen. Lame.

Anyways, make sure you have package xserver-xorg-input-libinput installed. Then you need to remove package xserver-xorg-input-synaptics and restart. After the restart you have all the options back in the GUI.

Everything is handled by xserver-xorg-input-libinput now. xserver-xorg-input-synaptics is interfering this.

Status changed, this issue STILL affects those running the HWE stack on Ubuntu 16.04 with Gnome. ( sudo apt-get install --install-recommends linux-generic-hwe-16.04 xserver-xorg-hwe-16.04 ) will result in outdated version of xserver-xorg-core ( <2:1.17.99.902) being installed which results in an unmet dependency for xserver-xorg-input-libinput and still breaks the tap to click dialogue. Removing the interfering xserver-xorg-input-synaptics obviously breaks things even more...
