And syntax highlighting actually works - it is just preferences not available for it.

I'm not sure what your issue is. Can you explain further?

Syntax Highlighting is found, according to gedit's help, under View > Highlight Mode. Is this it?

Yep, highlight is on and working.

It is a missing preferences page for changing highlight options (Preferences -> Syntax Highlighting Preferences in the gedit's help)

Closing this bug report as the help file of gedit 3.28.1 in Ubuntu 18.04 makes no reference to "Preferences -> Syntax Highlighting Preferences" so updated/corrected during the last eight years.
