BronsonMathews,
running "unity" from terminal helped me to return menubar to nautilus and evince, but not to gedit. Can you try it, please? (you may need to run it twice).

This bug was fixed in the package gedit - 3.18.3-0ubuntu3

---------------
gedit (3.18.3-0ubuntu3) xenial; urgency=medium

  * debian/patches/unity_no_csd.patch:
    don't use GtkHeaderBar decorations under Unity, they still create
    integration issues and are too differents. That should fixes those issues
    - having duplicated decorations (lp: #1542129)
    - right click on decorations not providing common actions like move to
      workspace (lp: #1527592)
    - using local menus loose gedit ones (lp: #1518516)

Are we sure this was actually fixed? I'm running gedit 3.18.3-0ubuntu4, and have *no* menus whatsoever. There's just a toolbar with Open, New (+), and Save buttons.

Actually, I just tried Petr's suggestion of manually running "unity," and Gedit's menus did suddenly start working. Perhaps this is actually a different issue.
