I have the same behaviour:

libusb couldn't open USB device /dev/bus/usb/005/002: Permission denied.
libusb requires write access to USB device nodes.

Using sudo with fprint_demo solves the permission issues.

A workaroud might be to add yourself to the plugdev group:
sudo adduser <your_user_name> plugdev

worked for me
