FWIW the problem seems to have gotten worse recently; GIMP 2.8 recently landed in Debian Testing, and somehow it got prioritized over Evince for PDF documents, which means every single PDF now opens with Gimp instead of Evince. I tried to override this in Preferences > Applications, but neither "PDF File" nor "Portable Document Format" entries had any effect. I wonder how that pane is supposed to work! :)
