I also find this. Normal sized flash video are fine. Fullscreen starts fine then deteriorates quick (2-3 seconds) to a very jumpy video (audio is ok and is not jumpy). I am running an uptodate (11 Oct 2009) Jaunty (64 bit version) with 64 bit (manually installed) adobe flash plugin.
Note: The 32 bit flash plug-in for Firefox is much more jumpy that the 64 bit version on every (64 bit) system I have tried.
