Why?
Imagine it's possible for evolution, then why not do it for every other application?

As of Ubuntu 8.04 with Evolution 2.22.3.1, Evolution still does not have the ability to minimize to tray. Please note this is different from minimizing to the taskbar, which any app under Metacity/etc can do. The system tray is the upper right corner area where Evolution displays a new mail icon when you have new mail. Typically, apps that have this allow you to click that tray icon and the app disappears from sight, and from the taskbar, only to reappear when you run it again. It's a logical way to keep certain apps running that perform important background tasks. Pidgin is an app that does this correctly.

that's not a bug, the system notification area is not designed for that and that's not because some applications abuse it that any application should have an icon there
