I don't have that issue on edgy with a fr_FR.UTF-8 locale It works fine for me with the same version. Does it happen with an another user? Do you use any particular plugin? What does "grep "_Éditer" /usr/share/locale-langpack/* -r" list? What about "strace -e open evolution 2>&1 | grep evolution-2.8.mo"?
