I have the same problem. I can not use Evince Document Viewer 2.22.2 to view Japanese document (pdf file) although there are MS Mincho, MS Gothic and MS PGothic in the font list of Evince Document Viewer.
I am using Ubuntu 8.04

I can confirm that the document displays lots of japanese text correctly in Adobe Reader 9 under Windows XP. But it asked me to install a 10MB Japanese fonts file. So I'm currently looking into xpdf-japanese...

xpdf-japanese did not help, but I discovered that if I run evince example.pdf from the command line, I get multilpe errors: "Error: Missing language pack for 'Adobe-Japan1' mapping"

SOLVED!
I found the solution in a forum: you need to install the package "poppler-data"
(description: PDF rendering library -- CJK fonts support)
CJK stands for Chinese-Japanese-Korean

Shouldn't evince inform the user that cjk-support is not installed, and maybe even offer to install poppler-data for the user (like adobe reader does)?

I can confirm that the package:
"poppler-data"
solves my problems with viewing PDFs containing Japanese characters.

I propose for poppler-data to be a dependency of Evince since it's required to display some PDFs.
If that's not acceptable then it should at least be a dependency of the CJK language packs since these
users are likely to view PDFs containing CJK characters.
If the above solutions are not possible for whatever reason then Evince should at least inform the user WHY
it can't display the fonts instead of just being quiet about it.
