This doesn't look to me like a bug in nfs-kernel-server, but some wrong output on the debconf pipe that has put things in a wrong state. Reassigning to debconf, though I suspect this is actually a bug in something earlier in the mythbuntu installer.

The error in the logs is:

Creating config file /etc/default/nfs-common with new version
Adding system user `statd' (UID 105) ...
Adding new user `statd' (UID 105) with group `nogroup' ...
Not creating home directory `/var/lib/nfs'.
