Confirmed. Thanks for spotting this!

When chromium is invoked with -h or --help, it tries to execute `man chromium`, which fails when confined. Relevant code: https://cs.chromium.org/chromium/src/chrome/app/chrome_main_delegate.cc?sq=package:chromium&g=0&l=350

Changed in chromium-browser (Ubuntu):
status: New → Confirmed
importance: Undecided → Medium

This is now live in the stable channel for amd64. Other architectures (i386, armhf and arm64) are still building in the candidate channel.

For future reference, I documented the process of embedding man and a man page inside a strictly confined snap: https://forum.snapcraft.io/t/how-to-embed-man-in-a-strictly-confined-snap-and-have-it-invoked-to-display-a-custom-man-page/13802.
