Chromium doesn't seem to ship with an apparmor profile in Debian either. The package apparmor-profiles provides a profile for chromium though.

That's correct as mentioning:

sudo apt-get install apparmor apparmor-profiles apparmor-utils

and package apparmor-profiles contains: /etc/apparmor.d/usr.bin.chromium-browser (wheezy: so in Ubuntu the chromium profile should get installed with a chromium install or the system/default apparmor profiles package should be updated.
