High contrast mode not using correct theme

Bug Description
Booting the live CD with F5+choice2 should start gnome with settings optimised for low vision users. Current, the setup uses a hybrid theme which includes the high contrast icons, but not the widgets and the larger font.
A 'High Contrast with Large Print' theme is fully installed on the live system, so it's just a matter of a few clicks to activate the right theme. I'm not sure what config parameters need to be set to make this work from first boot, but I'll work with Luke and others to find out and post more when I know.
Also: We have agreed to use a plain single-colour background for this theme (light gray?). There should also be a large mouse cursor. xcursor-themes has been promoted to main for this purpose. (again, I'll work on finding the required settings).
