for folks who want this to work in GNOME, create a custom application launcher.
* right-click on panel --> Add to Panel --> Custom Application Launcher

enter the following:

* Click on the icon to choose Audacity.png
* Type: Application
* Name: Audacity
* Command: bash -c "export UBUNTU_MENUPROXY=0 && audacity"
* Comment: Open Audacity with menus
