I've got my hands full on packaging, with more than 100 packages that I maintain and improve. So I cannot do that, but if you can write a couple of scripts and build Java programs, you can do the packaging!
Here are a few pointers to get started:

I have found somebody who has started packaging Squirrel some time ago, maybe you can try to build on this work.
The package looks decent, although a bit more work will be needed to get it accepted in Debian and Ubuntu repositories, and the version packaged is a bit old (3.0 instead of 3.2)

I would like to have this packaged in Debian / Ubuntu as well. I am currently working on packaging 3.2.0 version for Debian (registered #559867 ITP on b.d.o. recently).

If that can help, I have extracted the packaging files from the squirrel 3.0 package created by Markus Tisoft.
You can get it with this command:

bzr branch lp:~ludovicc/uj/squirrel-sql

Thanks, Ludovic. I have branched and merged my latest changes in lp:~rk13/uj/squirrel-sql.
I will keep updates there until ready (hopefully, this will not take to long).
