CRRCsim: A Model-Airplane Flight Simulation Program.
The flight model is very realistic. The flight model parameters are calculated based on a 3D representation of the aircraft. Stalls are properly modelled as well. The graphics are nice if you have a good 3D accelerator card. Otherwise it defaults to a no texture, no smooth shading mode that is functional but doesn't look good.
Flight control inputs can come from a Mouse, a Joystick (the Real Flight joystick and the Dave Brown joystick work fine on Windows) or your radio control transmitter. On Linux, the interrupt latency is far superior to Windows, so it is possible to write a special Linux only kernel module that times the PPM signal from your trainer cord port on your transmitter using the Parallel port interrupt line! I have done this, and it works great! You don't even need RTLinux.
