You appear to have an extension enabled that will impact performance:

  '<email address hidden>'

so please start by uninstalling that and to be sure also run:

  cd ~/.local/share/gnome-shell/
  rm -rf extensions

and then log in again.

If the problem still happens after that then while it is happening please run:

  journalctl -b0 > journal.txt

and attach the resulting text file here.

If the problem does still happen after that then please try:

  gsettings set org.gnome.desktop.interface clock-show-seconds false

If that solves it then the problem is https://gitlab.gnome.org/GNOME/gnome-shell/-/issues/2085 which I am working on right now :)
