Only video option is 1024x768 2007 Black MacBook
Video worked fine 16.04, but is messed up in 18.04

I think this is probably a duplicate of bug 1727356. Can you please try the workaround from that bug?

Looking at this again, it appears the low resolution is caused by the kernel option 'nomodeset':

You need to remove 'nomodeset' from your kernel command line. You will likely then need the fix or workaround for bug 1727356 too.
