I know MATE Tweak checks that your system has all the bits needs for each layout before displaying them. For example, I know after I removed Plank the layouts that use it disappeared. So most likely you are missing at least one package the other layouts need. Maybe Brisk Menu (mate-applet-brisk-menu)?

You might get want to post this to the Ubuntu MATE Forum (http://ubuntu-mate.community/) to get more people looking at it for suggestions.
