kafka: Can not configure Kafka via environment variables

Bug Description

I would like to configure Kafka parameters via environment variables in a same manner as it is done in wurstmeister/kafka (e.g. KAFKA_LOG_DIRS) or bitnami/kafka (e.g. KAFKA_CFG_LOG_DIRS). If it's possible to configure ubuntu/kafka this way, then I can't see any information about it in Dockerhub README.
