Hey Simon,

According to https://hub.docker.com/r/ubuntu/cortex, this image was
pulled more than 1 million times since it was published.

https://gallery.ecr.aws/ubuntu/cortex shows a very different number:
almost 2 thousand pulls. But I guess that's to be expected given that
ECR is much more recent than Dockerhub.

I don't have a strong opinion regarding maintaing or deprecating this
image. If you decide to maintain it, I'd suggest going the snap route
and get rid of the current way of building the image directly from
source.
