Dark mode color selection is weird

Bug Description

I'm attaching a screenshot of the situation.

When switching to Dark Mode the Ubuntu logo should stay the same color but the title next to it (Ubuntu) should be written in white or any lighter color than the current black as it is unreadable.

The text of the items and the highlights in the language menu are the same so selecting an item from the list makes the whole list item disappear.

The broken entry in the list turns out to be another RTL issue (see bug 2064700). Will be fixed by https://github.com/canonical/ubuntu-desktop-provision/pull/739

It does solve some parts of it, but my problem is the fact that in Dark mode, the highlight and the text color are the same, so I don't see what language is being selected (as the screenshot shows) :)
