Add entries in "applications" shortcut section for all default applications

Bug Description

It would be useful to have the option to set keyboard shortcuts for all default applications by using the applications section. So there would be entries for Text editor, video player, photo viewer, browser, email client, etc.

This would indeed be a cool feature. Just want to clarify from the OP, that we're talking about using the built-in gtk app chooser dialog.

Where exactly would the GtkAppChooserDialog be used? I thought the defaults would just use what is set in the Defaults switchboard plug.

Cameron, you could have an inline toolbar with a "+" button that uses the app chooser to be able to add more apps here. In this way it'd be like a custom shortcut section but instead of asking for raw commands you could add apps.

Something to consider is maybe we just use the widget from the startup applications settings in the "custom" panel instead.
