This is still an issue using Simple Scan 3.12.1 in Ubuntu 14.04. We have 4 printer/scanners attached to our network. Choosing any scanner in the Preferences window (other than the first one) sets the selected-device field in settings. When you exit and restart Simple Scan and return to Preferences, the Scan Source dropdown will initially be empty (about 1 second), than will populate with the network scanners set to the first one. If you start Simple Scan and scan without opening Preferences first, it will scan from the first in the list, but does not change the stored settings. Here is my settings output:
$ dconf dump /org/gnome/simple-scan/
[/]
text-dpi=150
window-height=400
page-width=595
window-is-maximized=false
paper-width=0
window-width=600
paper-height=0
selected-device='hpaio:/net/Officejet_6700?zc=HP6C3BE59599A3'
page-dpi=72
photo-dpi=300
page-side='both'
document-type='text'
scan-direction='top-to-bottom'
page-height=842

My users would love to see this fixed, since there is no easy way to distinguish in the drop-down which one is theirs when we have more than one of the same model. They just have to memorize their position, and update their memory if the list changes.
