If this is implemented, I'd suggest it be in compliance with rfc6186.
I don't see DNSSEC as a requirement, but rather an extra.
There's really little harm that can be done on a DNSSEC-less scenario that can't be done right now. And even if the SRV records are on a DNS domains that implements DNSSEC, the actual IMAP/SMTP servers might be in DNSSEC-less domains.
