Is /boot mounted read-only?
Can you attacht the output of mount please.

Did you by any chance put /boot on a FAT filesystem? If so, that doesn't work.

filesystem /boot is vfat :(
vfat does not support symbolic links
|| sorry - have seen it to late ||
