The next problem is, you can't open any photos with 'pantheon-photos' shows up with a black screen. 'Eye of Gnome' is working.

The strange thing 'Files' you can create a new folder with ctrl+shift+n but can't rename it afterwards.

btw. my ftp-Server is a Android (6.0.1) Phone and i use SolidExplorer or FileExpert so start the ftp-Server. And in Ubuntu Gnome (Nautilus) or Xubuntu (Thunar) everything works as expected.

Linux 4.4.0-53-generic
pantheon-files amd64

I can create and rename files on two test Linux ftp servers (one local, one in the cloud), subject to appropriate permissions on the target, although I have not tried the setup you have yet. Note that some applications, such as Scratch will not write to some remote locations even if it is permitted (at the moment). I could open jpg files on a local ftp server OK with the pantheon photo viewer but opening a large image on a remote server was problematic - but that is not really a Files problem.

I have the same problem. No files are copied via FTP to the server. Error that "not enough rights". Thus, in Nautilus the copying is correct.
