Conclusion:

On Jammy, for a machine with NV GPU on it, the default graphic mode will be xorg.

I think preferring Xorg on all systems is still the way to go. Here is a list of all the current limitations of the NVIDIA driver with Wayland (in the case of hybrid systems, no RTD3, for example):

The default session for most systems that don’t have an Nvidia graphics card is now Wayland. If you need a non-Wayland session, you can choose the Ubuntu on Xorg session by clicking the gear button after selecting your name on the login screen.
