It would be a nice to have added functionality to be able to define default cover art for songs that do not have embedded or linked art work.

I don't think that such option is worth adding more complexity and implicit behavior.
Instead Mixxx should offer batch operations for editing metadata. This could be used to explicitly assign cover art to multiple selected files.
