Override SmartEvidence icons with local folder

Bug Description

After a discussion with some users at the beginning of the week, it could be interesting to be able to change the icons used to show skills attainment on the SmartEvidence panel.

At present time, the icons are circles in different colours: grey when ready for assessment, orange (half circle) when it needs some more work, red when not attained, and green when the level of the skill is reached by the user.

My proposition is to be able to change these icons by others in placing the replacement in the local folder.

The context in which this feature is the following: stakeholders wanted learners to use SmartEvidence to tell how much they think having attained a skill (expertise) but also how pleasurable it was to reach the skill level. For the latter it would make sense to use small smiley (for example) than the coloured circles.

So the requested feature could be either simple: having a set of icons in the local folder to replace those used for every SmartEvidence matrix.

or

adding a set of icons for each matrix file, for example in a zipped folder, we import aside of the matrix file in the Admin page.

You can already replace the icons for all SmartEvidence matrices if you put the images into your local theme folder. However, that would affect all images.

If you want to be more flexible, they would need to be tied to each matrix making it more complicated, but I'm sure there would be a way of doing that. For example, if FontAwesome icons were used, maybe these could be added more easily in the matrix file itself compared to images. Images would need to be in a public folder on the site somewhere so they can always be displayed.
