It is possible to add a new path with the name "KIPRJMOD" and edit the value.
After this paths can not be resolved correctly.
Entry can not be deleted afterwards.

Removing and reinstalling kicad does not remove any of your personal settings. For windows these settings are in appdata/ roaming/ kicad (or similar path).
The file responsible is kicad_common. Remove the offending variable using a text edtior. This should get kicad up and running again. (This is not a true solution only something that you can do to fix your problem right now.)
