Erm, how is this much more complicated than in gnome?
GNOME:
a) right click -> open properties -> go to 'Open With' -> add the app you want
b) right click -> open with application -> select the app you want and select 'remember this app...'
KDE:
a) right click -> open properties -> click on the file type config button -> select the app you want
b) right click -> open with -> other... -> select the app you want and select 'Remember app association ...'
I don't see much difference there.
For the button: please file a bug about dolphin at https://bugs.kde.org/enter_bug.cgi?product=dolphin&format=guided
so the developers can talk to you directly. I think the button is fine, but using something like [_ICON_ "Change..."] instead might be better indeed. About the seperate window: That's simply because it's a different application (KEditFileType) and not part of the file manager.
