This seems to be a function of the setting in Preferences for the Node Tool: "Deleting nodes preserves shape". (preserve-mode active will change node type)

Holding the Ctrl key while deleting switches setting on a per-use basis.

The setting can be made the tool's default by unchecking the box in the Node tool preferences (double-click on tool).

Overriding that default behavior on per-use basis is again the Ctrl key.
